Thanksgiving with the Butterball Turkey Fryer and the Chef Basket

I saw the Butterball Indoor Turkey Fryer advertised so much that I figured that I just had to have it. That's what happens when you watch too many As Seen On TV Commercials. My wife was totally against this purchase to start with. She was afraid of indoor fires, and the thought of having a fried turkey for Thanksgiving didn't appeal to her. But when I ordered it anyway, she said that the turkey was my responsibility from then to when we sat down to eat turkey on Thanksgiving Day!

I'd heard that safety was an issue when frying a turkey. But in looking at this fryer I felt really comfortable in using it indoors. It's different from other turkey fryers in that it uses a submerged electric heating element with sixteen hundred and fifty watts of power. In combination with the dual thermostats, the cooking temperature will be exact every time and there's literally no chance of flare-ups or fire.

About the only thing I can do well in the kitchen is sandwiches and cereal, so this was definitely a new gig for me. I knew that the turkey should be totally thawed before putting it in the fryer, so I made sure that it was and got rid of the neck and giblets. I added oil to the fill line (about two gallons for a 10 pound bird) and preheated to 400 degrees. While the oil was heating, I dried the turkey with paper towels and seasoned with an off the shelf generic rub. After pre-heating the oil, I gently lowered the bird into the fryer and got a beer! In about 40 minutes, the dark meat reached about 175 degrees and the white meat was at about 170 degrees so I knew it was done. I carefully removed it from the fryer, and let it stand to drain for about 20 minutes before I carved it.

Talk about a great tasting, moist turkey...it was the best tasting turkey we've ever eaten! Cleanup was super easy, too...I just just recovered and disposed of the remaining oil and the inner bowl rinsed clean with soap and water. The Butterball Turkey Fryer and I will be good buddies every Thanksgiving from now on, that's for sure!

The Versatile Chef Basket

When my wife saw that I had ordered the Turkey Fryer for me, she ordered a Chef Basket for her, and that's what she was using to steam the asparagus while the turkey was cooking. It's a collapsable basket that folds flat when not in use, but opens to a colander type basket to use for frying, steaming, boiling or par-boiling.She really ordered the Chef Basket to prepare noodles, spaghetti or french fries. But since we were having fried turkey, she turned in inside out and used it to steam vegetables rather than doing fries.

if you haven't seen the Chef Basket, then you're not watching enough TV! It's a neat kitchen gadget you shouldn't be without. It's a collapsable basket that folds flat when not in use, but opens to a colander type basket to use for frying, steaming, boiling or par-boiling. One of the great features is that the handles do not absorb or transmit heat, so you can take the Chef Basket out of the boiling water or oil and go right to the table or serving dish without having to transfer the contents to a strainer. Inverted, it becomes a steamer for vegetables, and that's how my wife used it for our Thanksgiving vegetables.

Using the Butterball Indoor Turkey Fryer and the Chef Basket made this Thanksgiving's meal preparation a breeze...and it was the best tasting Thanksgiving we've ever had!

Once your child reaches six months of age, it is time to try out some foods that are healthy and an appropriate texture. The main rule to remember is to give items that are as nutritious as formula or breast milk. You should not replace those sound calories with options that are unhealthy.

Introduce new choices slowly so that you can watch for allergies. Pick a first food, and then wait for two to three days to see if there is reaction. Between ten and twelve months, your child may be ready for wheat products. Pasta and bagels are great options. Your child will also likely become even more independent with self-feeding. Only after the first birthday should you introduce cow's milk. Before this time, it can interfere with digestion and iron absorption.

At all of the stages, remember to make sure that you keep the cooking process free of pathogens. Ensure that what you prepare is thin enough for your baby to eat safely and comfortably. Always remember good nutrition.

The frequency of eating solids, like the choices themselves, depends upon age. Between six and eight months, give them two to three times a day. From nine to eleven months, provide another feeding. At the toddler stage between ages one and two, tots can eat three to four times a day, with one or two snacks.

Meet the Tomatillo

You may have seen those small green or yellow fruits that look like tomatoes, only they have a papery husk on them. These are tomatillos, and they are often used in Mexican food. They turn yellow when ripe, but most recipes call for green tomatillos. Green fruit is easier to slice and has a tarter flavor. The husk is similar to the orange Chinese Lantern plant. They are actually related, though the fruit from the Lantern plant has no flavor.

The flavor of a tomatillo is slightly acidic with just a dash of lemon taste. It is often used in salsa and other dishes to add a brightness to the flavor. They are related to tomatoes. They were grown by the Aztecs as long ago as 800 BC. They have been popular in Mexican and Latin American cuisines for generations. It grows wild in many Mexican fields, although the domesticated varieties you will see in the United States have very little difference between them.

Also known as jamberries or husk tomatoes, these small tart fruits contain a substance similar to pectin that thickens sauces and salsas when they are put in the refrigerator. Low in calories, the tomatillo is rich in potassium. It also contains vitamin C, folic acid, calcium, and vitamin A.

Mexican food history is full of tomatillos. You can follow in their footsteps and use them in many Mexican recipes. You can also try them in many of your other favorite recipes for a different taste. Add them raw to salads, salsa, or any raw vegetable dish to add some tangy flavor.

Drink Green Tea

In men and women, the degree of body fat, whether expressed as percent body fat or the ratio of waist circumference to hip circumference, tends to decrease as green tea intake increases. Green tea contributes to the maintenance of healthy body weight in several ways.

One of the least appreciated properties of green tea is its ability to limit the absorption of the fat taken in from the diet. Green tea catechins (especially EGCG) interfere with the lipase (fat-digesting) enzymes in the stomach and small intestine. The resulting incomplete digestion of fats produces some lipid droplets that are not able to enter intestinal cells and that therefore remain unabsorbed. These effects have produced significant decreases in the absorption of dietary fats by rats consuming green tea. While it is not known how effective green tea is in blocking fat absorption in humans, any interference with the normally highly efficient digestion and absorption of dietary fats could figure prominently in any effort to manage weight effectively.

Green tea catechins not only decrease the efficiency of absorption of fatty acids from the diet, they also interfere with the production of fat for storage in adipose tissue depots. Green tea leaf extract that is both purified and rich in EGCG decreases the activity of fatty acid synthase, which is an enzyme that regulates how quickly the body produces fat for storage. This process is consistent with a body of literature recently analyzed in the journal Molecular Nutrition and Food Research, which shows how EGCG inhibits new fat formation - "lipogenesis" - and fat storage within adipocytes. Tea aids in the absorption of less fat from the diet, and can also interfere directly with the storage of fat in adipocytes, a dual mechanism for supporting healthy body weight.

EGCG, the dominant green tea catechin, allures the body to change some of its ways of producing energy from glucose-burning to fat-burning. There are two different ways of doing this, and EGCG appears to do both. The first way, is if the amount of glucose available to tissues (especially the skeletal muscles) is reduced, then additional fat must be metabolized to carbon dioxide and water in order to satisfy energy needs. When there is a shorter supply of glucose, the liver is able to synthesize glucose from a wide array of precursors, such as amino acids that are released by muscle cells. The primary enzyme in this synthetic, gluconeogenic pathway, is phosphoenolpyruvate carboxykinase (PEPCK), which is inhibited by EGCG. The blockage of this enzyme reduces the formation rate of new glucose, requiring cells to switch to fat-burning for a source of energy.

In an example of exquisite biochemical coordination, EGCG also stimulates the conversion of fatty acids to energy. In cell culture studies, EGCG has increased the rate of utilization of fatty acid breakdown products instead of glucose to produce energy. In a series of experiments, mice, often studied because the way they obtain energy is pretty much the same as the way humans do, have responded to the addition of catechin-rich green tea extract to a high-fat diet with less weight gain and less fat accumulation within their bodies than mice fed the same high-fat diet but not fed catechins, despite eating just as much. This phenomenon has been studied in depth. In a recent study dietary supplementation of exercising mice with tea catechins forced skeletal muscles to switch from using their glycogen reserves as energy sources to increasing their reliance on burning fats from adipose depots. This "switch" is so reproducible that the researchers can predict when it will happen. The powerful phytonutrients (catechins) in green tea and green tea extract can recruit muscles to help stored fat get used up faster!

In humans, such a shift from glucose-burning to fat-burning will be seen as an increase in heat production (or thermogenesis). In a convincing demonstration of the fat-burning, thermogenic effects of green tea catechins, 24-hour heat production was measured in healthy lean to overweight young men during days in which they remained essentially at rest and consumed identical diets, no caffeine-containing foods or beverages, and either a placebo, 150 mg of caffeine alone or 150 mg of caffeine plus 270 mg of EGCG and 105 mg of other mixed catechins. These investigators observed that the consumption of placebo or 150 mg of supplemental caffeine alone during a 12-hour period failed to affect the utilization of fat or glucose to supply energy. In contrast, the consumption of green tea catechins during a 12-hour period increased same-day 24-hour total energy expenditure and heat production. This increase in energy usage was caused by increased fat-burning and decreased use of glucose for fuel.

Because under the conditions of this experiment all energy expenditure was essentially "resting" energy expenditure, the catechin-induced increase in resting energy expenditure reflects enhanced thermogenesis. That is, more heat production as a "byproduct" of energy production. Since increased heat production to satisfy the same energy demand means that the efficiency of energy production decreased, more stored energy needed to be "burned" - accelerating the rate at which energy stored in fat depots would become depleted. Of course, as stored fat becomes depleted, both body weight and fat depot size decrease. The increase in fat utilization in this experiment, which was minimized by keeping the subjects in a "resting" state, could result in the loss of one pound of excess body weight in 1 to 2 months and a loss of 6 to 12 pounds in a year. Consistent with this rough prediction, overweight adults consuming 270 mg of EGCG daily for 3 months experienced an average loss of 4.6% of total body weight, with an average decrease in waist circumference of 4.5%. This thermogenic effect of green tea catechins, when combined with a healthy diet and exercise, could be extremely beneficial for those looking to support weight management efforts.

Beneficial results were also shown in a gold standard, randomized placebo-controlled clinical trial, which was published recently in the American Journal of Clinical Nutrition. During this study, healthy men added either 22 mg or 690 mg of catechins daily to their diets for a total of 12 weeks. The results of this experiment showed that the men who were consuming 690 mg of catechins every day had lost more weight, inches off their waist, total body and abdominal fat.

What about Stress and Abdominal Fat?

A substantial amount of evidence signifies that stress and mood issues are associated with increased abdominal fat storage and a larger waistline in men and women. Stress and belly fat are connected by hormones; stress can increase the secretion of a hormone called cortisol. This hormone increases the rate at which fat is accumulated by abdominal fat cells. Repeated episodes of stress-related cortisol secretion can cause an increase in abdominal fat, even in healthy individuals.

What Can Green Tea Do About It?

Green tea contains an unusual amino acid - L-theanine. This amino acid comprises up to 2.5% of the total dry weight of unfermented green tea leaves, is absorbed efficiently and can enter the brain from the blood. Within the brain, L-theanine exerts relaxing physiologic effects. In so doing, L-theanine may act to reduce perceptions of stress with possible beneficial effects on abdominal fat formation. For example, mice fed L-theanine have gained less weight and accumulated less abdominal fat. By supporting the body's stress response, green tea and green tea extracts containing L-theanine can make important contributions to healthy weight maintenance.

Making chicken broth is not a precise science. Every cook has their own favorite method. You can use the bones leftover from a roasted chicken, or you may buy a whole chicken and use the entire bird for your broth. Most delicacies that are considered "gourmet" take time, effort, and skill to prepare and present. However, there are a few of these desserts that don't require near the effort or skill that one might think. For instance, trifles are pretty easy to prepare, while crme brulee, baklava, and Baked Alaska take some skill to perfect.

While Baked Alaska is a delicious gourmet dessert, it is one of those that is difficult to accomplish. The recipe includes a rich concoction of egg whites, fresh fruits, and ground hazelnuts.

Other prevalent gourmet dessert recipes also include the many different mousse recipes. Mousse is light and fluffy, but is often higher in calories than heavier desserts. However, mousse desserts leave room to breathe after a large meal. Mouse recipes can include bittersweet chocolate, egg whites, heavy cream, sugar, and run or other liquors. Strawberry and Trifle desserts are usually considered to be gourmet desserts even though most of them require little time to prepare. Strawberry desserts can be something as elegant as strawberries dipped in chocolate or as simple as strawberry shortcake.

Trifle is considered to be a traditional gourmet dessert. Trifle can be prepared differently in different regions of the world. For example, a traditional British trifle recipe may include home cooked custard, fresh whipping cream, raspberries, and pound cake, while the Americanized version of trifle calls for custard topping, whipped topping, raspberry pie filling, and angel food cake. In many regions, dark chocolate shavings are added for flavor and texture.

Gourmet will depend largely on where you are, who you are, and what you like. Whether your favorite dessert is considered to be gourmet in your area or not, dessert is certainly everyone's favorite part of a meal.

A Rare And Superb Day, We Knew How To Use It And People Didn't

A Diary Moment! A wonderful, clear and warm Sunday, a free day, so what should we to do with it? Fortunately the question had been solved on Friday night by the 1st Mrs Izzard who was saying that she'd like to go for a stroll by the riverside, but was complaining that according to the weather forecasts, she had no notion when that might be.

So when we woke up on Sunday it was just a case of picking which river and town. Came the solution most easily - Stratford along the Avon since I had never been there and she hadn't for years. The only thing outstanding was to collect a pal who was by himself for the weekend as his partner was off on an outing in Wales.

When we arrived we went down the bank of the Avon to the ferry, a famous landmark (water mark?) and across the water for a beer at the famous Dirty Duck, or Black Swan as it is properly named which is where all the marvellous actor types go as the RSC Theatre is just across the road. We went out into the garden and were a tad shocked to discover that they had a really nice bbq area with a big double set of bbq grills which was entirely unused. If ever there was a day for the landlord to roll up his sleeves and break out the briquettes, Sunday was it. What was just as puzzling is that since it is just by the river and the ferry, getting the smoke drifting out over the area and pulling in the hungry hordes was straightforward so why ignore it?

It irritates me when I see this. Particularly when the climate hasn't been ideal and you get a day, especially a Sunday, when conditions are improved and the chance is either ignored or missed. There is a pub nearby which has an operation especially set for getting out the bbq as soon as everything is in place they just spring into action, up go the blackboards and everything is ready. All that is needed are customers and that is easy as everyone knows that if the sun is out then the pub has got the charcoal grills and you just need to get there.

The bbq grills are constructed into a purpose built cabin which is in the garden and has a food prep area, deep fryers for chips and a work surface for making salads. It's a really impressive set up and depending on how busy they are then either the landlord can man the defences by himself or there are two charcoal grills together so he can have an assistant lend a hand on the meat. And there are usually 2 people on meat duty.

This is really impressive since if you are looking for somewhere for lunch on a sunny weekend afternoon, fancy a bit of bbq tuck but don't want to cook it yourself then you know where to be without needing to ask beforehand if it's on today. And because they are on the route through to popular driving, walking and cycling places, they also pick up an great deal of passing trade as well as people off the canals as they are also handily located next to a lock.

So why, when you have a celebrated pub useful as a watering hole for celebrity spotters as well as well balanced folks would you not use a particular area when the conditions for it are perfect?
