It does not matter if it's cooking classes in Cairns, Perth or even cooking classes Melbourne style, one thing is for sure; everywhere you go you will find a varied choice of wonderful Greek foods and information as you study deeper about this cuisine. What is about Greek cooking that makes it so great?

## Rural Custom

Greek cooking came from rural traditions and lifestyles. It's not about being chic, trendy and international with the choice of ingredients and it's not about a presentation that you are afraid to touch for fear of spoiling how it looks. Traditional Greek food is about what's growing around you, simplicity and making do with what you have. It came from an economically poorer "class" of people but it is indeed rich with flavor, freshness and love.

Anytime we want an apple, there's always the local market nearby for us to buy one. The apple might just have been plucked even before it was ripe, for all you know. And it might just have spent more time in storage and delivery before it's able to reach your dining table.

Traditional Greek cooking on the other hand uses only what is close by and available for that season. If they need something to get from the local market, they will get what's been picked the very morning, not a week ago from a different part of the world. This maintains the freshness as well as the juiciness of the food.

## All of Them Are Homemade

No store bought sauces or mixes allowed! Don't even think of buying your tzatziki or your bread. Everything is from scratch. Not only are the ingredients farm fresh but it is all assembled with love, by hand. There's no substitute for homemade.

## Easiness

It is presented in a simple way, unlike any of those nouvelle cuisines. All there is to it is some fresh ingredients coupled with some easy recipes that make the delicious taste of Greek cuisine along with a little herbs and spices here and there. Traditional Greek cooking is very delicious and simple looking -- just what you want in a cuisine.

## Time to Prepare

Many Greek dishes take a lot longer to prepare and cook than we are used to in our hectic kitchen moments. This hearkens back to traditions of baking and stewing which are old, tried and true.
